2 cups shredded cooked chicken

Levant: Musakhan with Tahini

Musakhan — roasted chicken over sumac-spiced flatbread piled with deeply caramelized onions — is one of Palestine's most iconic dishes. Tahini sauce isn't part of the traditional recipe, but its richness cuts through the tang of sumac and adds a silky finish that ties the dish together.

4 bone-in chicken thighs

2 large onions, thinly sliced

1 tablespoon sumac

2 tablespoons olive oil

Taboon or other flatbread

2 tablespoons toasted pine nuts

8 oz pasta of choice, cooked

1 cup fresh basil leaves

1 garlic clove

1/4 cup grated Parmesan

2 tablespoons olive oil
